Matcha

Matcha is a finely ground green tea made from tencha. Tea leaves harvested from shaded bushes, then the leaves are steamed, dried without rolling and ground into a fine powder. Because the entire leaf is consumed in powdered form, matcha has a more intense flavor and richer mouthfeel than ordinary green tea. Its taste is full-bodied, vegetal and with umami. Characteristics vary between different varieties and producers; high-quality matcha may also exhibit sweet, creamy, and subtly fruity notes. Matcha powder can be prepared as usucha (thin tea) or koicha (thick tea). Our selection includes matchas specifically from the Uji region as well as culinary-grade matcha suitable for cooking and baking. To prepare it, sift the matcha into a bowl, add water (80°C), and whisk vigorously back and forth using a bamboo whisk (chasen) until a fine foam forms on the surface.
