Matcha - Uji Mukashi (Horii Shichimeien, Uji) 30g
Uji Mukashi is Horii Shichimeien's basic matcha quality, which is well suited for making usucha, or thin tea. The tea comes in a 30 g jar. Dry matcha has a cool, fresh and sweet scent. It's like a cool, fresh breeze. The scent of whisked matcha is even and minerally grassy. The taste starts with sharp grassy tones. As the taste develops, it fluctuates between a pea-like sweetness and a umami-like minerality. This is a matcha for those of you who are not afraid of a roller coaster of flavors, where sometimes you go too fast and sometimes the pace slows down.
Details
Established in 1879, Horii Shichimeien, a tea producer in the Uji region, is one of the most hyped producers in the matcha world. The producer is known for the refined, nuanced aroma, rich umami and bright green color of its matcha grades. Horii Shichimeien manages tea production from the tea garden to the finished product. The tea gardens are located in the Yamashiro area, in the Uji and Kizu rivers. During the Muromachi period, the third shogun Ashikaga Yoshimitsu recognized seven particularly good tea gardens in the Uji region. Of these, only one survived to this day, and Horii Shichimeien continues to produce tea from this garden.
