Taiwan
Taiwan is renowned for its diverse oolong teas, ranging from lightly oxidized and fresh styles to more heavily oxidized and roasted varieties. Well-known types include high-mountain oolongs, Dong Ding, Baozhong, and Oriental Beauty. High-mountain oolongs, or Gao Shan Cha, are grown in areas such as Alishan, Lishan, and Shan Lin Xi. They are generally lightly oxidized and lightly roasted, with tightly rolled leaves that highlight fresh and floral aromas. Tea names often indicate the growing area and cultivar, such as Qingxin or Jinxuan. Dong Ding is typically more oxidized and roasted, while Baozhong is very lightly oxidized, with fresh, floral, and green notes. GABA oolong is produced under low-oxygen conditions and can display sweet, fruity, and slightly tangy notes.
