White

White tea is a type of tea traditionally associated with China's Fujian province. Its production involves minimal processing: the tea leaves are withered—allowed to dry slowly—and finally dried completely. Intensive rolling or other mechanical manipulation is generally avoided, allowing the leaves to retain their natural shape. The best-known varieties of white tea are Silver Needle (Bai Hao Yin Zhen) and White Peony (Bai Mu Dan). Silver Needle is produced primarily from young, unopened buds, whereas White Peony incorporates the bud along with the surrounding young leaves. Other known varieties include Gong Mei and Shou Mei. The aroma of white tea is typically soft, subtle and slightly sweet, often featuring floral, herbal, fruity and honey-like notes. High-quality white teas are also suitable for multiple sequential infusions.
