Horii Shichimeien

Established in 1879, Horii Shichimeien, a tea producer in the Uji region, is one of the most hyped producers in the matcha world. The producer is known for the refined, nuanced aroma, rich umami, and bright green color of its matcha grades. Horii Shichimeien manages tea production from the tea garden to the finished product. The tea gardens in the Yamashiro area are located in the region of Uji and Kizu rivers. During the Muromachi period, the third shogun Ashikaga Yoshimitsu recognized seven good tea gardens in the Uji region. Of these, only one survived to this day, and Horii Shichimeien continues to produce tea on this garden.

This tea grade

Todou Mukashi is Horii Shichimeien's high-quality matcha grade for preparing usucha, or thin tea. The tea is mainly based in the Samidori tea cultivar of Kyoto. The leaf material is hand-picked. The tea comes in a 30g jar.

Taste

The aroma of dry matcha is velvet-like powdery, cool and fresh, and grassy and sweet. The scent of whipped matcha is a filled with umami and refined grassy aroma. The taste is full of soft umami. In addition to the softness of the umami, there is a bright, bitter grassy note on the back of the tongue that leads to the contrasting aftertaste. It has a sharper grassiness and a mellow softness of umami.
