Kukicha is a Japanese green tea that is produced using both the green part of the tea leaves and the leaf stems and twigs. This produces a green tea with less caffeine than normal, but still has the fine and fresh taste of Japanese green tea.
This tea
This kukicha is organically produced (supervisory authority FI-EKO-201) in Japan's largest tea production region, Shizuoka. The tea is first-picked, which gives it a delicate flavor. The tea contains some green part of the tea leaves and a lot of leaf stems and twigs. The taste is more floral and slightly less grassy than sencha tea. Kukicha has less caffeine by weight than the average green tea.
Taste
The aroma of the dry tea is fresh straw-like and at the same time creamy green. The taste is sweetly roasted and robustly grassy.
Infusion
Use about 2g (a tablespoon) of leaves per person. The water temperature should be about 80 degrees. The favourable length of brewing is 2-3 minutes if the pot size is less than 500ml and 2-4 minutes if the volume is larger. If the tea is brewed in a mug, a generous teaspoon of leaves is enough. Adjust the amount of leaves and the length of infusion according to taste. The leaves can often be steeped a few times.
